The Devonshire at home – Coconut Mojito
You may not be sipping cocktails overlooking the beautiful Bolton Abbey or Chatsworth Estate at the moment, but we hope this twist on the classic Mojito will give you a summer tipple to savour in the sunshine of your own back garden!
You will need:
12 fresh mint leaves
3 lime wedges
2 teaspoons brown sugar
1 1/4 ounces (2 1/2 tablespoons) white rum
1/2 ounce (1 tablespoon) coconut rum
1 ounce (2 tablespoons) cream of coconut
1 cup chilled soda
Garnishes: lime wedge, fresh mint leaves, pinch of grated coconut
Muddle 12 fresh mint leaves, 3 lime wedges, and brown sugar in the bottom of a cocktail shaker. Add white rum, coconut rum, and cream of coconut. Fill shaker with ice, and stir vigorously until chilled. Strain mixture into a tall glass, and top with chilled club soda. Garnish, if desired.
