Meet the team – Cavendish Hotel
Meet Sol our fabulous Head Pastry Chef at the Cavendish Hotel, and the hidden talent behind our beautiful pastry dishes and popular afternoon teas. Prior to joining our team, Sol had worked under a number of well know chefs, Josh Emett New Zealand’s MasterChef judge and Ben Bayly to name a few.
She loves designing and creating a dish from start to finish that offers the perfect balance of savoury and sweet elements, and has a passion for incorporating herbs and vegetables into her creative desserts, pushing the boundaries and creating unique and bespoke dishes.
Sol’s favourite ingredient and this may come as a surprise is … Chocolate! However not your ordinary square of dark, milk or white chocolate but Callebut Gold Chocolate, which is fine Belgian chocolate with rich notes of toffee, butter and cream with a dash of salt.
Sol’s signature dish is her ‘Autumn Forest’, a pistachio conker with mango served alongside a decadent tarragon & dark chocolate ice cream. The team at the Cavendish would say that Sol makes without doubt the best soufflés and luckily for our wonderful diners you can sample either her Cherry Soufflé or Tiramis-ouffle in the Garden and Gallery Restaurant!
