Devonshire at home – Apple Tarte Tatin
Need a new recipe to satisfy your sweet tooth? Try our Apple Tarte Tatin, dark and sticky caramel, sweet apples and crisp pastry make this heavenly dessert perfect for those colder evenings to enjoy with your loved ones.
You will need:
125g Butter
250g Caster sugar
1 Star anise
1 Vanilla pod cut
1 Cassia bark
2 Braeburn apples
250ml Double cream
Puff Pastry
Tatin pan
Vanilla ice cream or your preferred choice
Method:
Cut the puff pastry into a circle to fit your tatin pan
Peel and core apples
Slowly on a low heat cook butter and sugar with the spices until the butter re-in cooperates into the sugar to create your caramel
Pour a good amount of the caramel into the tatin pan and then on a light heat place the apples core side down until lightly cooked and become translucent
Turn the apples over and place your pastry over the top tucking nicely around the apples
Bake in the oven at 180 degrees Celsius for 12-16 minutes until golden and puffy
For a luxurious sauce heat the cream and mix well with the remaining caramel
Remove the tatin from the oven and carefully turn out on to a plate (take care as caramel will be piping hot)
Add your sauce and ice cream of choice
