Chatsworth Farm Shop – Trout Fillet with Jersey Royal and Spring Green Salad

Ross Forder, Head Chef of the Brasserie at The Devonshire Arms Hotel & Spa, has shared this delicious trout fillet recipe for you to try at home.
You will need (serves 4):
2 large trout fillet (250g plus each)
400g Jersey royal potatoes
250g asparagus
200g broccoli – sprouting
4 duck eggs
Bunch rocket or watercress
1 lemon – ½ zest and juice for dressing , ½ for finely diced lemon pieces
30g wholegrain mustard
50g Chatsworth honey
Soft chopped herbs (parsley, chive and dill)
