The Devonshire at home – Yorkshire asparagus, wild garlic hollandaise & chorizo dressing

A delicious seasonal dish, including freshly foraged garlic. Enjoy as a simple brunch or tasty starter at home!
You will need:
For the asparagus:
250g pack of asparagus
2 Shallots
40g chorizo
Rapeseed oil
2 Duck eggs
For the hollandaise
250g butter
3 egg yolks
1 tbsp white wine vinegar
Large handful of wild garlic (chopped)
salt and pepper
