The Devonshire at home – Raspberry Mojito

Enjoy this deliciously sweet mojito recipe, best savoured in the summer sunshine!
You will need:
1/2 lime, cut into wedges
Juice of 1/2 a lime
75g raspberries
3 sprigs of mint, leaves picked
1 tbsp demerara sugar
50ml white rum
50-100ml soda water
Crushed ice
Method:
Muddle the lime wedges, lime juice, raspberries, mint and sugar in the bottom of a cocktail shaker (retain a couple of raspberries and mint leaves for garnish). Add white rum. Fill shaker with crushed ice, and stir vigorously until chilled. Pour mixture into a glass, top with soda water and garnish. Enjoy!
